Baha/Florence: Eating RAW 101: Description of Content

Course Content:

NOTE: All three class sessions will be hosted through Adobe Connect as Eating RAW 101 is an online course. Prior to Class 1, participants will have signed up on the course Moodle and downloaded the Syllabus as well as article 1 for class: Eating RAW 101.

Class 1:
Eating RAW 101: Intro and Overview

During the first class session, hosted on Adobe Connect, participants will be introduced to what it means to eat RAW. Instructors will provide a definition for the purpose of class as well as an assigned article for further reading on the topic [Eating RAW 101--downloaded from Moodle]. As the class session progresses, benefits and pitfalls of eating RAW will be discussed. Participants will be encouraged to share their opinions on eating RAW and then review the assignment to complete after class.

After class, students will post a Wiki entry on Moodle, responding to the following questions: "What are three interesting things I learned about eating RAW? In trying to incorporate RAW eating into your diet over the next three weeks, what other RAW information are you curious to learn about?"

Class 2: Eating RAW 101: RAW foods and the RAW Kitchen

During the 2nd class session, students will review last week's assignment (see above). Instructors will then delve into the class content; including: basic RAW food groups and nutritional benefits; the RAW kitchen and the necessary materials. In addition, they will also cover information on buying and preparing RAW foods. During class, students will download an article from Moodle [RAW Foods and Nutritional Benefits] and then take a short quiz on Moodle.

After class, students will complete an assignment on researching places to eat and shop that support a RAW diet. They will use the Moodle Wiki to post at least one place to shop and one place to dine.

Class 3: Eating RAW 101: Recipes and Diet Choices

During the 3rd class session, students will review last week's assignment (see above). Instructors will then delve into the class content; including: RAW diet choices (100% RAW or not?) and RAW recipes. During class, students will point to articles downloaded prior to the session from Moodle [Percentages of RAW Eating and RAW Recipes] in discussions.

After class, students will complete an assignment on compiling a day's worth of RAW recipes to share with the class. They will use the Moodle Wiki to post their recipes and they will also review all of the class postings and choose three posts to respond to.
