Course Goals: EATING RAW 101

Diet and nutrition impact our physical, mental and emotional well being. RAW foods contain enzymes that are generally destroyed when heated over 116 degrees F (think about all of the cooked food we eat!). Being able to identify and incorporate RAW foods into the diet can potentially help to improve overall health. Therefore, the goal of this course to provide students with the necessary knowledge and skills to understand and participate in RAW eating.

Course Objectives:

Upon completion of the course, students will be able to:

1. Define what eating RAW means according to class notes and assigned article reading.

2. Site five benefits of eating RAW in response Internet research and forum posts by other classmates.

3. Identify from a list of 20, foods that are considered part of a RAW diet.

4. Describe the essential tools and materials needed for a "RAW kitchen".

5. Locate at least one place to dine RAW and one place to shop RAW.

6. Produce at least three recipes to share with classmates: one for breakfast, lunch, and dinner.
